The Best Way to Use Over Ripe Avocados
If you're like me, you buy avocados when they're on sale. More than likely you buy too many and then they sit - with no plan. I usually buy them for avocado toast but for some reason I have at least 2 left over. So here on Super Bowl Sunday I decided to put my ripe avocados to good use - Guacamole.
Guacamole is so versatile. You can eat it with chips, use it for a topping on a burger, or a warm piece of toast. Or you can top some crunchy tostados with it like I did.
To Make Guacamole you will need:
3 ripe avocados
2 chopped Roma tomatoes
3 Tablespoons chopped cilantro or parsley
1 lime, juiced
2 cloves garlic, minced
1 jalapeno peppers (without the seeds) finely minced
salt to taste
In a bowl add the flesh from the avocados and mash until smooth. Add the chopped tomatoes and cilantro or parsley, garlic and jalapeno. Mix well. Then add the lime juice and salt and mix again. Top with more chopped tomatoes and cilantro/parsley.
Guacamole is best eaten the day you make it. But will keep for a day or so.
