When you want a snack and only peanut butter cups will do.
There's a lot of talk lately about food and food additives. So why not try to make things at home where you have control over the ingredients you consume. And as a bonus, you probably have all these ingredients in your pantry.
To Make Peanut Butter Cups You Will Need:
2/3 cup smooth peanut butter
1/4 cup of powdered sugar
1 cup semi sweet chocolate chips
1/2 Tablespoon butter
In a mixing bowl add the peanut butter and the powdered sugar. Mix well so there are no lumps and the powdered sugar is mixed in completely.
Over a double boiler, melt the chocolate chips with the butter. Stirring constantly and be careful not to get any water in the chocolate.
Remove the chocolate from the heat. Then add a splash of vanilla.
Add a spoonful of the peanut butter mixture on top of the chocolate, trying to get it in the center as much as you can. Top the peanut butter with more chocolate.
Tap the muffin tin on the counter to help the chocolate to cover the peanut butter filling. Once the cups are filled, put the whole muffin pan in the freezer.
Freeze for 3-4 hours. Then ENJOY!
I used semi sweet chocolate chips but if you prefer dark chocolate then you can use those.
The peanut butter cups can be made in a mini muffin pan too. Just be sure to buy the smaller liners.
Once they are made I store my peanut butter cups in the freezer. For as long as they last!
If you want to melt the chocolate in the microwave, be sure to microwave for 30 seconds at a time, stirring after each 30 seconds.
