Easy English Muffins

 


I've been making different types of bread for a few years now.  But one thing I hadn't tried is making English Muffins.  Making English Muffins may sound intimidating but they really couldn't be easier.  The dough is very basic and when you use a bread maker (on the dough cycle) it's so very simple too.  



In this post I will give you some tips and tricks to make these English Muffins to look and taste like store bought - at a faction of the cost.  


To make English Muffins you will need:

1 1/4 c warm water

1 T sugar

1 tsp yeast

2T oil

2 3/4 c flour

1 tsp salt

cornmeal for dusting

If you're using a bread machine add the ingredients in the order listed.  Select the dough cycle.


If you're making the dough in a bowl add the water, sugar and yeast to the bowl.  Let the yeast bloom for at least 5 minutes.  Then add the oil, flour and salt.  Mix until well until it  becomes a cohesive dough.  Take the dough out of the bowl and add to a board that is lightly floured.  Knead the dough until smooth - about 5 minutes.

Once the dough has been kneaded place it back into a bowl that has been brushed lightly with oil.  Cover and let rise.  The longer the dough rises the better the flavor will be.


After the dough cycle on the bread machine has finished leave the dough inside the machine for up to 8 hours to improve the flavor, but a couple hours would be fine.

Once the dough has fermented take it out and put it out on a lightly floured board.  Pat it down into a rectangle and cut it into 8-10 pieces.  You can use a round cookie cutter to make them uniform, but I like them to be a little more rustic.  If you don't use a cookie cutter take each piece and roll them into a ball.  Press each muffin down to make them (a little) flat.

Place the Muffins on a baking tray and cover them and let them rise for 30 minutes.

Once the muffins have risen roll each one in corn meal - top and bottom and add them to a dry skillet set on medium heat. You can use a cast iron but I prefer my electric skillet - the temp is easier to control.

Cook the muffins in the skillet for 5-7 minutes on each side, or until golden brown and cooked through.

Then top them with jam, jelly or peanut butter.  They also make great breakfast sandwiches.
