Today is Day 1 of the Cooking from the Pantry Challenge
I've done a complete inventory of my kitchen - pantry, freezer, and fridge, and I have to admit- we are well stocked! That brings me to the challenge. For the next 2 weeks I will be creating meals exclusively with what I have on hand. It's a chance to use up what I have and get a little creative too. The first day starts with dinner - Cesar Salad and Roast Chicken.
In my last grocery order they had salad kits on sale. The one we got was Bacon Cesar which means it comes with the lettuce, dressing, croutons, and Parmesan. All I needed was some roast chicken.
So I headed to the deep freeze and grabbed one of the biggest chicken breasts I ever seen! It was plenty for multiple servings. I seasoned it simply with salt and pepper, then off to a 450ยบ oven for 35 minutes. I checked with my probe thermometer to make sure it was done. It turned out with crispy skin and juicy meat. Absolutely delicious!
I've scheduled out the next couple weeks according to my husband's schedule. It's just a guideline and might change. It's better to be flexible. These recipes will make at least 4 servings so there will be leftovers for lunch the next day. I hope these next posts will give you some inspiration, help you cut down on waste and give you some new things to try.
