Easy and Delicious Dumpling Soup

Day 2 - Cooking From the Pantry

I have challenged myself to use what I have on hand to create meals - for at least 2 week.   In order to save money and lessen food waste.  For day 2 I decided to use the dumplings from the freezer that I bought from Dollar Tree.  They are a name brand and are delicious.

To make the broth I used classic flavors to fortify bullion powder.  The broth was flavored with ginger, and garlic, onions (red onion and green onion) then simmered for 30 minutes to let the broth get fully flavored.

While the broth was simmering I added a handful of coleslaw mix (so it didn't go to waste) to add more fiber and  veggies.

After the broth simmered, I took the dumplings out of the package and heated them according to the package directions.

Then to serve I poured the broth over the dumplings.

I topped my bowl with soy sauce and sesame oil.  But you can whatever use toppings you like.

I've been having so much fun creating meals from what I have on hand.  I'm a practical person and food waste is a big NO NO for me.  So this challenge isn't really a challenge, I guess.  But it is making me realize that I can make substitutions and tweak things.  They might not be exact but they will be delicious and will help with lessening food waste.
I hope these posts help you create with whatever you have on hand to make a delicious, simple and healthy meal.
