Nothing hits like Chicken Noodle Soup
When the sky turns gray and the wind blow colds, there's nothing better than a hot bowl of soup. It's simple and inexpensive to make. And there's always lots of left overs that are always better the next day or even the day after.
When I was little I loved Campbell's soup. I would never eat any of the homemade soup my mom would make. For me it was always chicken noodle or better yet double noodle. But as I got older my tastes have changed and since I have control of what goes into my food, I make it the way I like. And let me tell you - it's fantastic with a slice of fresh bread. The broth is made with aromatics - celery and carrots along with my favorite soup base. It's always best to use chicken bones to make it even richer in flavor. I like to add some bay leaves because I love the flavor.
The easiest way is to poach some chicken breasts. Once they are cooked then remove them. Add in the soup base with pepper, bay leaves and the veggies. Let the broth simmer uncovered for at least an hour.
Once the broth has simmered remove the bay leaves. Then add the noodle of your choice. I prefer egg noodles. Cook them according to the package directions.
NOTES:
Making soup is a great way to use up leftovers and to clean out your fridge. It's also great way to stretch you grocery dollar. No more veggies going limp in the veggie drawer.
Using bone in chicken will give your soup even more flavor. But if you leave the skin on be sure to skim the fat off so that you don't have greasy soup.
If you don't have or don't like noodles you can always use rice or even wild rice. Just be sure to adjust the cooking time.
The longer you simmer your broth the more flavorful it will be.
To make Classic Chicken Noodle Soup you will need:
1 large chicken breast -with or without bone
2 large carrots, sliced
2 stalks of celery, sliced
1 tablespoon of chicken base
12 cups of water
2 bay leaves
4 ounces of egg noodles
