If you're looking for a simple, delicious, creamy chicken dish then this is the one for you. It's perfect for a week night dinner or for company. It uses simple pantry/fridge ingredients to make an impressive delicious meal. It can be served with rice, mashed potatoes or even noodles.
Cut chicken breasts in half, then season with salt and pepper. Brown the chicken on both sides in olive oil. Remove from the pan and set aside.
To the pan add 2 Tablespoons of butter. Add a finely diced onions and sliced mushrooms and cook until soft.
Once the onions and mushrooms are cooked add garlic (I used pre-chopped so it was 2 teaspoons) and then season with thyme and rosemary. Add another 2 tablespoons of butter and then add 2 tablespoons of flour. Cook the roux for 1-2 minutes. Deglaze the pan with 1 cup of chicken stock scraping up the bits on the bottom. Cook until thickened then add 1 cup of heavy cream, half and half or milk.
Add the chicken back to the pan and cook until the chicken is cooked through.
Serve with rice and your favorite veg.
TO MAKE CHICKEN IN CREAMY MUSHROOM SAUCE YOU WILL NEED:
2 large chicken breasts, cut in half lengthways
1/2 large onion, finely diced
1 small package of your favorite mushrooms
garlic
thyme, rosemary
4 Tablespoons butter, divided
2 Tablespoons flour
1 cup chicken broth
1 cup milk, cream or half and half
