Road Trips on One Tank- Pacific MO- Santa Claus IN

Day 1: Pacific MO- Santa Claus IN Even though I write a travel blog taking a long weekend trip still renews me. Taking a quiet, country road lined with rambling farms makes for a pleasant and relaxing road trip. And that's exactly what we did over the past weekend. Taking Hwy 64 from St Louis through Illinois was the perfect way to go. Very little traffic, not even tractor trailers. We were able to set the cruise control for most of the way there. Except for the few places where there was road construction. I had a special crafting event in Santa Claus (more on that in another post), so we got a room at the lodge. I think it was a good choice. It was still early in the season (which starts in May) so the lodge was virtually empty. When you first walk into the lodge there is no mistaking that you are in the land of Santa Claus. Pierogies- A Quick and Inexpensive Lunch

Recently I found coupons for Mrs. T's Pierogies and a sales for buy one get one free so I decided to stock up. What are pierogies? They are little dumplings made of potato that might have different fillings or flavorings in them. So far I've tried the spinach and feta cheese and today I had sour cream and chives. Sour cream and chive pierogies sauteed with garlic and olive oil The best way to make them (I've found) is to boil them in boiling salted water until they float then heat up olive oil in a saute pan (with garlic) and saute them until then brown a little. If you serve them with steamed vegetables or a salad, it makes a complete and healthy meal. You could use them as you would pasta too or in a stir fry. Truly economical and delicious!! Small Batch Chocolate Chip Cookies Simple and Delicious! As a retiree and someone who spends a lot of time at home - I've found just how tempting a whole batch of cookies can be. In order to not over eat and to be able to have variety I've been trying small batch cooking. Not just for sweets but also for dinners too. My. husband still works so having leftovers for lunch is great. But honestly we don't need a full pan or pot of anything that will last a week. We get tired of eating the same thing, sometimes things get pushed to the back of the fridge or just get forgotten. Making things in smaller batches has been the answer for us.
